    Was wondering… My mom used to cook a chocolate cake in a single layer square pan. Somehow the receipe has been lost. What was great about the cake though was the fact that it had a tough bottom layer with a honeycomb effect perpendicular to the pan. This layer was about 1/2 to 3/4″ deep. While this may have been because she did something wrong – after awhile she stopped getting it. I am looking for what caused it – cuz that was the best part of the cake. Can you advise?

    Can you tell me more here? When you say perpendicular to the pan, are you talking about it coming up the side? Did the recipe have baking soda?

    Hi Nancy,

    One of the things you can try is using half and half. That is half cream and half milk. Are you using a “low fat” recipe? The other option may be whipping cream. Heavy cream is 36% butter fat. Whipping cream is 32%.
